Maple syrup production has started earlier than usual

Warmer weather means an early harvest for Ontario maple syrup producers. 

According to Christopher Chomysh, who helps operate the sugar bush on Wasauksing First Nation, taps are in, and sap is flowing. 

He says the sap came earlier than normal as forest temperatures rose in early February.  

“The community here has been harvesting sap for centuries. I don’t think we have ever had taps in this early,” said Chomysh.

He is hopeful that they’ll be able to bring in a sizeable crop this spring. 

Maple syrup lovers will be able to taste test that crop, and other locally produced products at Parry Sound’s first annual Maple Fest on May 4.
